So my youngest is 9 months old now but still very TINY! So we are on a mission to make sure she is getting plenty of calories as her 3 sisters were all a full 4 or more pounds heavier at this age. On comes baby cookies! These are great for babies who like to feed themselves.
I didn’t feel like reinventing the wheel so I started with a base recipe here and changed a few things.
Ingredients:
2 – tablespoon shortening (you could replace this with butter!)
1/4 – cup sugar
1 – egg (if you dont want to give baby eggs before a year you can exclude this, just add a touch less cereal)
1 – teaspoon baking powder
1/4 – teaspoon salt
1 – teaspoon vanilla extract
4oz jar of baby food
+/- 2 – cups dry baby cereal
Directions:
Heat oven to 325 degrees. Cream shortening and sugar.
Add eggs, baking powder, salt, vanilla and water. Gradually stir in baby cereal. I eyed this on my batch, I will get a better measurement on my next go.
Knead until smooth.
I used a cookie scoop and flattened with my palm of my hand. OR you can roll out into a rectangle and cut into 1 inch bars. Smooth edges so they will not be sharp. OR roll dough in a little flour and cut with cookie cutters. (circle and basic shapes are best)
Bake for about 30 min. or until dry. Check at 20 minutes. Store in uncovered container overnight.
I found it took almost 40 in my oven, but it tends to cook on the cool side. We are adding a lot more moisture in my version though, so it will take longer for them to dry out. I also bake on air bake pans which changes how they cook.
